Commuting to the Dumpling Mecca

Getting here is half the adventure, and honestly, don't even think about bringing a car unless you want to spend two hours looking for a parking spot that doesn't exist. Just take the LRT-1 to Carriedo Station. Once you step off the train, the heat and noise will immediately hit you, but that is all part of the Binondo vibe. From Carriedo, you can walk towards Plaza Lacson and cross over to Ongpin Street. If the sun is too brutal, grab a tricycle, but make sure to negotiate the fare before hopping in. The traffic along these tight streets is legendary, so walking is usually faster anyway.

The Legendary Pitstops You Can't Miss

First stop has to be Dong Bei Dumpling on Yucatan Street. Watch the ladies roll the wrappers and stuff them with pork and chives in the front window. They boil them fresh, and when you bite in, the hot soup burst is insane. Don't burn your tongue! From there, walk past the herbal shops and head to Shanghai Fried Bun. The line is usually long and the service is super fast-paced, so be ready with your order. Grab a box of their fried pork buns—the bottom is perfectly crispy while the top is soft. Eat them while they're hot, standing on the sidewalk. If you need to cool down, find a store selling cold sugar cane juice. It is cheap and literally saves lives in the Manila humidity.

Next, make your way to Lan Zhou La Mien. You can hear the chef slapping the dough onto the counter from a block away. Order the beef lamien; the broth is simple but rich, and the noodles have that perfect chewy bite that machine-made noodles can never replicate. By the time you finish, you will be sweating like crazy, but your stomach will thank you.
